Surprise Dinner 2K9

So after a late night at work (thank you Vice POTUS who delayed my commute, well, that and the rain), I was really considering throwing in a frozen pizza, but something told me to step it up. Boy, am I glad I did. Here’s what I knew I had to work with: 2 Small White Baking Potatoes (they had about 1-2 possible days left) Can of Black Beans 1 Green Pepper Hmmm….what to do? Honestly, until it showed up on my plate, I didn’t know either. I started with the potatoes. I placed them on a cookie sheet with olive oil and sprinkled them with Adobo seasoning. I baked at 350 degrees, turning once for 30 minutes. In a skillet, I threw a can of black beans, a chopped up green pepper, a small handful of raisins and a dash of Adobo and dash of cumin. Simple Happiness

Simple Happiness Since I was a kid, I was taught that dinners have to take at least 3-4 quadrants of a plate. Much like a cafeteria tray. Protein Vegetable Starch Possibly Another Starch I feel like I’m always trying to replicate that in some capacity. But sometimes I just want a sandwich for dinner. Or sometimes I’m just not really that hungry, and would prefer to snack on edamame. Today was sort of one of those nights. Sandwich & Veggies I don’t know why, but this just screams lunch – not dinner. Thomas’ Bagel Thin w/ Turkey & Sabra Took maybe two minutes to prep. And I loved it. It wasn’t a glamorous dinner, it certainly wasn’t sexy, but it hit the spot. You can find so much happiness in the simplest things. As I’m reading now in The Happiness Project.
