Wahoo Weekend!
It’s finally HERE! The weekend! After a three day week last week, no office internet for two days AND icy roads this week seemed neverending. But it has finally come to a close!
Dinner last night was made using the remains of the kitchen to create Peanut Shrimp Pasta. Ingredients included: Penne Pasta, Frozen Shrimp, Scoop of Organic Peanut Butter, Milk, Pine Nuts, Spicy Peanut Dressing, and Sesame Seeds. I was literally opening cabinets and saying, “This would be good in here!” And a star was born!

I decided not to do the gym this morning. I am still recovering from this cold and my body is saying “uncle!” For breakfast I made an Egg McMuffin. I toasted an English muffin, microwaved a beaten egg in a bowl for 1 minute and 15 seconds, added some shredded cheese, and a spread of TJ’s Artichoke Spread.

Today is Powerball Friday! My coworkers and I have started a tradition of buying lotto tickets on Fridays. We can dream!

I Love My Job, Really….
Who’s having one of those days today? I am. Just because the sun is finally shining doesn’t mean I am. The internet server was down….again, for the bulk of the morning. I got a multitude of last minute requests – short order chef, it’s what I do. And just still feeling like overall garbage from this cold. Oh well, at least tomorrow’s FRIDAY!
Breakfast was a lovely pairing of Van’s Honey Oat Waffles with Frozen Berries. I love microwaving the berries because they get all oozey over the waffles!

Lunch was had at the desk and was a Flat Out Wrap with Hummus, Tomato and Spinach with Celery Sticks and a Banana on the side.

It Finally Happened
Yes blogland, I FINALLY got that head cold that has been going around. Honestly, I have not had a cold in such a long time, and I forgot how much they can kick your booty. So I will post briefly and get back to some tea and sliced orange.
After my blog posting nightmare yesterday, I was so glad our internet was up and running today. But, to recall the eats of yesterday, here are a few shots.

Dinner was a delicious meal a la fiance. He made a breaded pork chop, baked potato and sliced tomatoes.

This morning I woke up to a sheet of ice. Poor Thumper starfished out when he tried to bolt out the door. I’m sure you all have heard Obama talk about DC not being able to deal with winter weather, but believe me, it was messy!

I had a luncheon event today, and wasn’t sure I’d get a chance to eat, so in anticipation I had a Coconut LARABAR.

A little sample of chicken, chilean sea bass, asparagus with goat cheese and raspberries, polenta cake with pine nuts and some roasted potatoes.
The guests and my clients raved about the food. Our caterer was Design Cuisine, a local DC caterer who is AMAZING! They worked many of the Inaugural Balls, and I highly recommend them to DC girls for weddings, corporate events, and MORE!
They also came with these bite sized desserts. Since they were so tiny, they didn’t really “count” so I had a carrot cake nibble. Ssshhhhh……

I had an alumni event tonight, but I skipped it to recuperate! The fiance and I dined on some leftover breaded pork chops, some parmesan roasted potatoes and sliced tomatoes.

I’m in Need of a Good Book
UPDATE: I have been trying to post this since 10 AM, but our internet at the office was down ALL DAY!
Due to the declining economy I have decided to stop purchasing books, and hit up the library for some free “rentals.” However, I have yet to actually make it to the library, and I’ve read all my magazines for this month, so on my bus ride to work I’ve been catching up on my blog reading on the Blackberry. Thank goodness for technology.
I was so upset last night. Went to the gym, did a warm up on the treadmill and then walked over to the studio for some Club Strength. I had a strange feeling that something wasn’t right. I looked at the schedule and they’ve CHANGED it! It was Sports Circuit – NOT Club Strength. LIES!!!!!
So, I left and went home for some ExerciseTV. Check out Tina’s review of what it has to offer.
For dinner we had some yummy Taco Salad. Made with ground turkey and some frozen corn added in. It’s so easy, so filling, and so good!

This morning I awoke to SNOW! Of course, unlike back in the day when we would have snow days, I had to come into work
But, I still wanted that warm and cozy feeling so after many many breakfasts without it, I went back to OATMEAL.
Ingredients included:
1/2 Banana, 1/2 cup Oats, 1/2 Cup Milk, Cinnamon, Honey and Vanilla with Blueberries and PB on top.
Oh oatmeal, how I missed you so!
Now it’s off to fill out 71 pages of paperwork for my dad. He’s moving to South Boston, VA so I have to fill out all his release forms. Where the heck is South Boston you ask? Are there Sox there? Paul Revere? Patriots? Ben Affleck? The simple answer is no. It’s 6 hours away and almost in North Carolina, with not much around. Glad I have such an exciting new place to visit! Whoo!

A Gym Sandwich
That’s right – today is a gym sandwich day. I was up and at ‘em at 4:30 this morning and at the gym by 5:00 to do 20 minutes of elliptical intervals, a 20 minute run and abs. Tonight after work I am heading to the gym near my office for a 45 Minute Club Strength Class. Voila – gym sandwich!
Post gym I was feeling waffle-y, and had two Van’s Hearty Oat Waffles with Sliced Banana, Cinnamon, and Honey Drizzle (we were out of syrup). I didn’t put much honey on, so they were a little dry, but just as filling.
This breakfast kept me full til lunch – which came faster than I expected!
Lunch was a Flatout Wrap with Chicken Salad, Veggies & Hummus and a Whips Yogurt.
Back to work
Did You Know? Prince Harry is back on the market. I’m more of a William girl myself, but for those of you younger ladies, or urban cougars, you just might have another chance for royalty to come your way!

Over Already?
You know when you just have one of those really good weekends? Not for any particular reason, but you just feel accomplished, rested and rejuvenated for the week? That was my weekend. And, I’m sad that in just a few short hours it will be over
Friday afternoon was fairly slow, which meant I actually got to leave my desk for lunch. I had some Campbell’s Chicken Tortilla Soup and a banana.
We then went out to buy a Powerball ticket. Hey, the economy sucks and we’d all like a few mil! But, I’m still writing this blog and not off for a month long vacay, so, as you can tell I didn’t win
After work I headed to the office gym for a Friday evening workout. I love working out on Friday nights because you always have the gym to yourself!
The fiance and I had no plans for dinner, so we found ourselves wandering the frozen food section of Safeway at around 8:30. I know, you’re jealous from my lively Friday night adventures.
I settled on a Boca “Chicken” Patty on and English Muffin with some Oven Roasted Potatoes. Easy and just the right thing.
Saturday I woke up early to head out to my massage. I was sooo tight in my shoulders! I am not an extravagant person, but I do love a good massage every now and then. I think they’re important for the mind and body, and if you haven’t had one, you’re missing out.
After an overwhelming trip to Costco for a new dog bed and this ginormous tub of Sabra Hummus, I headed home:
Lunch was eaten at around 2:30, and was a similar meal to the night before (sorry for lack of variety). Boca Chicken Patty and Edamame. Soy overload!
I did some strength training and then got ready to meet up with some friends in the Chinatown section of DC. Now, I should preface this with the fact that I HATE that area of the city. It’s fun, but it’s uber-touristy and if you’re driving, which we did, allot at least 45 minutes to find a parking spot – 60 if it’s a weekend. It’s one of those places that by the time you arrive at your destination you’re exhausted from the whole process already. But, we were meeting an old friend, so it was worth it.
We all went out to Clyde’s Gallery Place. The Clyde’s chain is a Washington staple, and their food is consistently good. I had a Vodka/Soda, a piece of bread with some crab and artichoke dip, and White Bean & Chicken Chili. Unfortunately, I forgot my camera, so I couldn’t snap any pics!
This morning I woke up to breakfast from the fiance. An egg white omelette and a piece of bacon. I am typically not a bacon fan, but for some reason it smelled really really good while he was cooking it, so I gave in and had some. Thumper did too
My grandmother’s 90th birthday was a few weeks ago, so today we had a special mass said for her at Missionhurst Chapel in Arlington. I had never been to this chapel before, but it is BEAUTIFUL. It reminded me of a tiny little church in the hills of Spain or something. It was a beautiful service with friends and family – and instead of a normal homily we all said what we loved most about her. I think celebrating one’s life while they are still here is so important – let them know how much they mean to you while they are here, and not after.
We then headed over to my aunt and uncle’s for a luncheon. Here are some group shots. The grandchildren (about 1/3 of us) and our grandmother:

It’s always nice to spend time with family, and it was such a pretty afternoon! After a trip to the grocery it was back home for chores. We got a ton done, and are all geared up for the week!
Dinner was light. A Flatout Wrap (only 90 calories and 6 grams of fiber!) with some Spinach and Chicken Salad.

Off to check out the gorgeous fashion of the Screen Actors Guild Awards tonight. I love award/inaugural season! The outfits and celeb watching is a favorite pasttime! Hope ya’ll had good weekends!
