Eggplant Stackers

Eggplant Stackers Hi you guys! I am so so sorry for being an absentee blogger, but I figured most of you would be so focused on checking out the Healthy Living Summit that if I could take a weekend off, I would! What did I do? I ran, I went to a birthday party, I lounged by the pool, I hit up the gym, I cleaned, I ate, I went to the farmer’s market, I went to the mall, I was captivated by the speakers at HLS, I went on a hike with a friend, I watched about 11 episodes of Mad Men and took Thumper to the bath. Just to name a few. What did you do???? Did you watch the HLS Live Stream? I won’t bore you with all the ins and outs of my eats, but I will highlight one of the best dinners I’ve ever made. Eggplant Stackers. I was inspired by Cook Yourself Thin’s recent recipe for a variation on eggplant parmesan. These puppies are just 300 calories a stack! I    [...]

My Luck Was Down, and Then it Came Back

My Luck Was Down, and Then it Came Back Here are some ways I’ve been unlucky today: * I woke up at 5:00 am to go on a run, but before I left walked Thumper. Came back to apartment. All fired up to grab my iPod and go! Realized I’d locked apartment door. Took a big long walk with Thump, sat in the grass, thought about how many miles I could have run in the hour and 20 minutes I waited until Geoff woke up. Great start. * I left my camera cord at home – again. For the third time this week. * My YSL Cover Stick ran out of make-up. I also have three prominent blemishes on my face. That’s what happens when I claim I have “flawless skin” to the blog world. * I have my mid-year review. While singing my praises, I am told for the bajillionth time in nearly four years that due to the economy they can’t find any money to give me. Yet there is money to    [...]

Trusting Your Gut Instincts

Trusting Your Gut Instincts As women, I would wager that our gut instincts are right about 90% of the time. You just get that “feeling” that something is amiss. Some people dismiss these instincts, but you HAVE to listen to them – do NOT tune them out. Whether if you think you’re sick, if a relationship is fizzling, or if you start to feel in danger do not ignore these feelings. From a safety standpoint it is imperative to be aware while on walks/runs. So many of us bloggers and readers are runners – meaning we set out so often on our own – whether it be on the road, through neighborhoods or on trails. There are weirdo’s EVERYWHERE, but let’s be honest, how many times have you heard of a female jogger going missing or being found? Yea, a lot more than you hear that a crazy attacked someone in a grocery store. Albeit, that does happen. This morning    [...]

A Bumpy Ending

A Bumpy Ending I can’t believe we have to go home tomorrow I don’t want to say goodbye to the beach, but I do want to say goodbye to my sun poisoning – or as I found online – polymorphous light eruption. Exhibit A Exhibit B I’m a leper! I used sunscreen every day, and luckily it’s not on my face, but all over my arms and legs. It says online that it goes away in 10 days. What a souvenir! Yesterday was my only non-workout day, and I enjoyed lots of sun and surf. So did Thumper. I started yesterday with a Peanut Butter Toast And then went out to Tommy’s Gourmet Market to pick up some cute food souvenirs. Check out my loot. I have been wanting to try that nut butter since seeing it on Tina’s blog a few months ago. I had maybe half of that White & Dark Chocolate Chunk Berry Infused Cookie from Heaven. I had to restrain myself    [...]
