Tough Workout and Gas Leak!

Good Evening!  We are sitting here with the windows open and enjoying the unseasonable lack of humidity!

After work I headed straight to Washington Sports Club for the 5:30 Total Body Conditioning class.  Now, this class was PACKED – so I knew it must be good.

Our instructor showed up and immediately was like a drill sergeant – but in a good way!  She was encouraging, helpful and really kept you going the whole time.  She also had us doing exercises I’d never done before and spent extra time on certain parts of our bodies that I typically see omitted in other classes (ie: thighs).  I will definitely be heading back to one of her classes again!

When I walked in our apartment building tonight I smelled GAS!  And it got stronger in our apartment – which I remembered I had smelled when Thumper and I came back from our morning walk this morning.  I went to the stove and realized it was turned on and leaking gas all day!  Poor Thumper having to breath that in the whole day!

UPDATE: The gas company just came to check the gas levels because a neighbor complained of gas smells.  We’re that couple now.  Awesome.  No seriously, they’ve brought in a troop of guys that might as well be the Ghostbusters.

Needless to say, we waited a few minutes before we started cooking dinner!

While waiting I snacked on some raw mushrooms and cherry tomatoes.  These are great snacks because they fill you right up, but without the calories!

Dinner was a Trader Joe’s Special!

Appetizers – Vegetable Pot Stickers

I had 2.5 – they really tasted like restaurant quality, and Geoff didn’t believe me that there wasn’t meat in there!  And you can put them in some water and cook them in a microwave – that’s what I call easy!

And the main course – Tofu on Lime Rice Pilaf with Avocado

I cubed a block of tofu and marinated the cubes in a blend of soy sauce, peanut butter and srihacha sauce.  Then I lined them up on a cookie sheet and baked at 400 degrees for about 20 minutes.

The lime pilaf is also super easy.  It comes in a little pouch and you literally cut the top off, pop it in the microwave and let it heat up for two minutes.

Done!

I placed the tofu on top of the rice and added some diced avocado for color and creaminess.

Geoff thinks this is the best tofu I’ve ever made.  I’ve got to say – the spicy flavor from the hot sauce mixed with the sweetness of the peanut butter and accented by the tang of the lime was such a party in my mouth.

Start to finish this dish took maybe 20 minutes.  Easy!

And for dessert a little popsicle before I work on some grad school essays – yea, ‘ya heard me – grad school.

oh no! poor dog! I hope he is all right, and you get the gas thing resolved. And yeah, wasn't it especially humid today in the DC area?

oh I'm so glad everyone is okay, that could have been a really scary situation!

Potstickers is on my list of foods to be included in my last meal. Yep, right up there next to Enchilada's!

The gas leak sounds scary. I'm glad it turned out okay.

I love the vegetable pot stickers from Trader Joe's. And the tofu/rice/avocado dish sounds awesome.

haha, you are THAT couple. whatever, better get it fixed than walk around high off gas fumes! that tofy does look amaze!

I love when you talk highly of WSC. I used to be a trainer there and sort of jump for joy a bit when you talk about the classes you love.

that sounds like a rockin' class -- i love drill sergeant instructors.. they definitely keep my butt in gear!

sorry to hear about the gas leak but i'm glad everything is a-okay and the "ghost busters" took care of the situation ;)
