Tonight’s dinner was a delightful combination of the following ingredients:
- TJ’s Artichoke Ravioli
- Olive Oil
- Chicken Stock
- Tomatoes
- Marinated Artichoke Hearts
- Italian Seasoning
- Salt (yes, it’s in an old Corona bottle with a salt top)
I boiled the ravioli for five minutes and simmered the other ingredients in another pan on low heat.
Ravioli to bowl, broth to cover ravioli, bowl to placemat, fork to mouth.
I have to say, this dish was very tasty, light and left me feeling fulfilled. HOWEVER, the Trader Joe’s Artichoke Ravioli didn’t leave me with a “wow” moment. They were okay, but not what I was expecting. I was expecting them to be a bit more dense, maybe a little more rich, but most of my flavor – I felt – was coming from my own broth.
Oh well, still a good dinner.
Prior to the meal I snacked on some edamame whilst cooking.
And for dessert – some Puffins and Chocolate Chips.
Off to type some more essays and read a bit more of The Art of Racing in the Rain. For any dog lovers out there – you will LOVE this book, and I am only halfway through!

i need to cook with artichokes more often! that meal looks so delicious!!
ravioli is awesome on it's own but throw in some artichoke and you've got yourself a perfect meal :) where'd you find that?!
Jenny - I got them in Trader Joe's - in the refrigerated food section. They're a MUST!
