Great Weekend

I feel so accomplished today!  We had a GREAT weekend and were able to accomplish wedding tasks, clean, workout AND meet up with friends – new AND old!

Yesterday I woke up and did some cleaning around the apartment before heading to the gym for a 45 minute cardio session and some strength training.

And then I headed into Georgetown to meet some fellow DC bloggers and readers for coffee.  It was so fun to finally meet these women behind the posts.  Everyone was so diverse and we had a blast chatting – two hours worth of convo! I can’t wait to see you ladies again soon!

After coffee I returned a $400 impulse dress purchase back to Cusp.  When you start hemorraghing money like I am for this wedding, you suddenly start to think, eh, what’s another $400? Luckily, I snapped out of it.

So where was all my food?  Ok, I have a confession to make.  I totally thought we were all going to eat something at Le Pain Quotidien, but everyone just stuck to coffee.  I was ravenous by the time I left!  It was 3:00 and there was nothing in my belly.  Talk about not practicing what I preach!  I ran into CVS and bought this Asian Trail Mix and a water to tide me over while I finished errands.

After many errands and a slightly anxiety inducing trip to Bethesda’s Whole Foods, I came home to make dinner for a few of our friends who were coming over to help tie ribbon on the programs (crafty I am not).

To start I made White Bean Dip again with leftover pita and veggies.  I also put out some salsa and tortilla chips.

I can’t wait for spring to start this weekend!

I marinated some chicken breasts in Annie’s Mango Cilantro Marinade and topped them with black beans.  I put them in a dish and baked at 350 degrees for about 50 minutes.

It was so moist and flavorful!

I also made a mixed greens salad with goat cheese, pine nuts, cherry tomatoes and a blueberry pomegranate vinaigrette.  The salad was a hit!

Our friends stayed over til 10:30 or so – HUGE for us on a school night. But, this is a short week for us, so we’re kind of already on vacation time :)

Off to try to focus on some work, but really, I might just be finalizing seating arrangements all daySshhhh…..don’t tell!

Please, the week before your wedding - I would assume they do not expect you to do any real work!

Hey Quinn, it was so fun to meet you yesterday! I had a great time chatting with you and all the other girls. And ha, I totally thought the same thing about lunch...I was STARVING by the time we left. I guess we should've said something, huh :)

Good luck getting everything ready for the wedding this week!

I am so sad I missed the DC blogger get together! My lax game ran late because of the rain! Hopefully we can do it again soon so I can meet everyone!

Take some time and relax the last few days before your wedding! You are going to have so much fun!
